Whole 30 Chicken Lettuce Wraps

As some of you may know, back in January my mom, dad, and I did Whole30. Monitoring everything I ate was quite tedious and I didn't realize how many foods contained sugar. This was one of our favorite Whole30 approved recipes. These lettuce wraps are healthy, very filling, and so easy to make. Whenever we make this for dinner we double the recipe, so we will have plenty of leftovers to eat throughout the week.


Chicken Lettuce Wraps



  • 1 tablespoon of olive oil
  • 1/2 of a yellow onion, diced
  • 1 cups of baby bella mushrooms, minced
  • 4 cloves of garlic, minced
  • 1 pound of ground chicken
  • 3/4 cup of shredded carrots
  • 1/4 cup of coconut aminos
  • 2 teaspoons of sesame oil
  • 1 teaspoon of rice wine vinegar
  • 1 tablespoon of almond butter
  • 1 teaspoon of freshly grated ginger
  • 1 tablespoon of hot sauce
  • 8 ounces of water chestnuts, diced
  • 2 green onions, thinly sliced
  • 1 head of Bibb lettuce


  • 1/4 cup of coconut aminos
  • 1 1/2 teaspoons of sesame oil
  • 1 teaspoon of rice wine vinegar
  • 1/2 teaspoon of hot sauce
  • 1 tablespoon of almond butter
  • 1 tablespoon of green onions


  1. In a large skillet over medium heat, warm the olive oil and add the onion. Let the onion cook for about 3 minutes or until it begins to soften. Add the mushrooms and cook for an additional 3 minutes or until the onions are translucent. Add the garlic and cook for 30 seconds, stirring constantly.
  2. Add the ground chicken and cook until browned. Add the carrots and stir until they begin to soften.
  3. In a small bowl, combine 1/4 cup of coconut aminos, 2 teaspoons of sesame oil, 1 teaspoon of rice wine vinegar, almond butter, ginger, and hot sauce. Whisk until combined and pour it over the meat mixture in the skillet.
  4. Add the water chestnuts and green onions and cook for an additional 3-5 minutes.
  5. Whisk together all the sauce ingredients in a small bowl and set aside.
  6. To serve, spoon 3-4 tablespoons of the meat mixture into a leaf of Bibb lettuce. Serve with sauce and garnish with sesame seeds and green onions--optional.

The most time consuming part of this recipe is cutting up all of the ingredients. To make it easier, we use pre-diced onions, shredded carrots, and pre-diced water chestnuts. To dice the mushrooms we use the Pampered Chef Food Chopper.
